FRUIT COCKTAIL PUDDING

Semlm cuti dr baking membaking nih... anak ibu demam...mulut pahit gamaknya...suma x mo makan.

So ibu try buat puding buah ni..manis2 sket....alhamdulillah...sib baik dia mau makan...

Ibu selongkaq dapoq acik rinnchan nie....untuk anak ibu.... ibu kopipes ja...hehehe



Ingredients:
  • 1 packet original flavour of jelly, abt 11 gm
  • 2 eggs
  • 4 cups of water
  • 1/2 can evaporated milk (susu sejat cair)
  • 1 cup sugar ( used 3/4 cup)
  • 2 tblspn custard powder
  • 1 can fruit cocktail

Method:

1. In a large casserole combine all ingredients but the fruit cocktail.

2. Stir over medium heat and bring to boil. *If the mixture gets crumbled or lumpy, strain to other casserole using a sieve.

3. Add fruit cocktail. ** If you include the syrup as well, pls lessen the amount of plain water.

4. Stir until well combined.

5. Pour into tray or mould cups of your choice. Let cold at room temperature before chill it into refrigerator.

Orange Butter Cake

Kek ni ibu buat untuk makan2....bwk balik umah maktok smlm. Maktok dgn wawan suka la kek-kek mcm ni. Kalo kek2 cekelat cm tu...kureng sikit.

Resepi ni ibu amik dr buku Amy Heng....ibu mmg x nyesal beli buku ni...berbaloi-baloi.... hehehe

Lets try it....

Ingredients :
  • 250g pure creamy butter
  • 250g caster sugar
  • 4 eggs
  • 100ml fresh orange juice
  • some orange rind
  • 250g self-raising flour* (ayak semua bahan bertanda *)
  • 30g ground almond*
  • 1/2 tsp baking powder*

Utensil

  • 9"round cake tin (tp ibu pakai loyang petak 9")

Method:

  1. Beat butter and sugar till light and fluffy. Add in eggs one at a time. Beat until batter is light and creamy.
  2. Fold in flour and orange juice alternately until well mixed. Lastly, add in rind.
  3. Pour no.(2) into 9" greased and lined tin and bake at 160C in a preheated oven for 55-60 minutes. Do not open oven door for the first 30 minutes or the cake may shrink.

Kelas cupcake - Super amatur

Baru2 ni along (kakak) balik sempena raya cina. Anak sgt la syok sbb bole jumpak Ami, anak along yg baru 5 bulan tu. Makin jambu ibu tgk Ami....hehehe...

Balik kali ni, along ckp kat ibu nk belajaq buat kapkek dan coklat...alahai...ibu pun x nah pi kelas lagi cm acik Jeri. Main belash ja waktu buat kapkek kat paklang hari tu.

Tp utk x hampakan kakak (Wani a.k.a kakak Ami), ibu buat la setakat yg terdaya. Coklat x sempat buat...almaklum la...ada dua budak kecik....

Ibu ajaq yg simple2 ja...sbb ibu pun bukannya pandai...nanti pandai ibu ajaq lain ya....

Coklat dan Lollichoc

Semalam ibu MC, x sedap bdn...may be sedap kurang rehat kot la nie. But its okay...dah lama x mc....hehehe

Actually today ibu ada order 35pcs mix choc, 12 lollichoc, 1 kek pisang, 1 set muffin pisang. Alhamdulillah, ibu manage to deliver all except kek pisang.

Sebabnya? Kek pisang yg ibu bakaq mlmnya turun bila pagi. Mungkin pisang tu a bit ranum. Ibu x jadi nk juai kat Acik As sebab cosmetic fail. So apalagi, ibu buat kenduri la kek tu. drp membazir baik kongsi dgn kengkawan kan?

Lupa lak ibu nk snap pic kek dan muffin. Koi 5 pg ibu dah bgn nk siapkan suma termasuk kain khemah yg abah nk pasang hr ni.

Muffin Pandan dan Strawberi untuk Maria

After midnight smlm ibu dpt 1 sms asking for my muffin. Her name is Maria. Mula ibu ingatkan Acik Maria kwn opis ibu.

Amazing...this is my frist cyber order. I cant believe it but its true. Maria order 50 biji muffin pandan dan stroberi in individual pack. But delivery will be today. sebb ibu cuti (amik cuti), ibu terima la gak order ni....

Lollichoc

Waaa...ibu rasa sangat besh dpt buat lollichoc. Mcm main warna2 pun ada. A satisfaction is there. Unspeakable.

Alhamdulillah...ibu dah dpt order 1 dozen untuk jumaat ni. Hari Jumaat ni pun ada order lain lagi untuk choc, mix 35 pcs....alhamdulillah...

American Choc Cake untuk Ilah

Happy Anniversary Ilah. Doa ibu, moga ikatan yg terjalin antara Acik Ilah d an Acik Firdaus kekal bahagia dan diberkati Allah sehingga ke kahir hayat. Amin.

Acik Ilah order kek ni dah lama, lebey 2 minggu rasanya. Tp maaf ya Acik Ilah, American Choc cake ni x dak white choc mcm acik Aida hr tu. Sbb bila dah siap br ibu nampak white choc kat mana. Maaf sgt2...ibu ganti dgn almond flake.

Ideanya ibu nk letak tag Happy Anniversary kat kek. Tp cr punya cr merata kedai out of stock. So ibu gantikan dgn gel candy. F love F means Firdaus love Fadzilah or can be other way round... not a problem.

Muffin Pisang untuk Farah dan Kak Nonnie

Thanks for opis mate ibu, Acik Farah dan Acik Nonnie. Acik Farah order 30, so ada lebih 15. Hr tu Acik Rosni ada ckp, kalo ada lebey dia nk.

Unfortunately, hr tu Acik Rosni x mai. So bila masuk opis ibu sj bgtau kat Acik Nonnie...alhamdulillah rezeki ibu, Acik Nonnie share beli dgn Acik Wanie...

Ibu ingat nk lego ja...not a problem...thanks kepada suma kengkawan ibu yg slalu support ibu.

Carrot Walnut Cake

Cake of the day. Ibu sgt suka kek ni...tp ibu x makan. Sebabnya? Kek ni hantaran paklang ke pihak perempuan. Inysa-Allah ibu akan buat lagi...sbb x tahan daulat dgn bau dan bahan kek ni... terancam ibu...




Kek sebelum mekap
Resepi jugak dr Delicious Cake from Amy heng (ibu dah kena sumpah ka dgn buku ni?)
Ingredient:
  • 250g butter
  • 300g caster sugar
  • 2 tsps vanilla essence
  • 5eggs
  • 350g grated carrot
  • 120g chocolate chips
  • 120g chopped walnuts (toated, chopped)
  • 150g pineapple (cubed)
Sieved ingredient
  • 250g superfined flour
  • 80g-self-raising flour
  • 2 tsps cinnamon powder
Cream-cheese froasting (ibu buat 5/3 adunan)
  • 150g cream cheese
  • 70g butter
  • 70g icing sugar
  • 1tsp lemon juice
  • coca powder for dusting (ibu x letak ni)
Utensil needed
  • 9" square cake tin
  • greaseproof paper
Method :
  1. Line and grease a 9" square cake tin. Preheat oven at 180C.
  2. In a mixing bowl, beta butter, vanilla essence and sugar on medium speed until ceamy. Gradually add in eggs one at a time.
  3. Turn to low speed and add in carrot and sieved ingdredients. Lastly, fold in choc chips, walnuts and pineapple cubes.
  4. Pour batter of no.(3) into prepared tin and bake for 1 hour or until baked through
  5. Remove cake from pan and leave to cool. Spread with cream cheese frosting and dust with cocoa powder.
  6. Cream cheese frosting : Beat cheese, butter, sugar and juice until light and creamy. Spread on cooled cake. Dust with cocoa powder.

Fresh Fruit Cake

Ini pun kek hantaran untuk majlis pertunangan paklang tp untuk pihak perempuan. Acik Mila request untuk ibu buat fresh fruit cake. So referred to buku Delicious Cakes from Amy Heng, jadikla kek ni....

Ibu sgt puas ati sbb semua puji kek ni sedap....maktok pun suka....hehehhe




FRESH FRUIT CAKE
Ingredients :
Sponge cake
250g plain sponge cake mix
5 eggs (grade A)
70ml milk/water
1tsp vanilla essence
70g butter (melted)
Custard filling
100g custard mix
150ml cocktail juice
200ml whipping cream
1 tin fruit cocktail (825g, drained)
Decoration
Some fresh fruit
Nibbed almond (toasted)
Whipping cream (whipped)
Some apricot glaze
Utensil needed
9" round cake tin
9" loose-base cake tin

Method :
  1. Cake : Preheat oven at 180C. Line and grease a 9" cake tin.
  2. In a mixer, put sponge mix, eggs and milk. WHisk at low speed for one minute and increase to high speed for another 8 minutes. Add in essence and melted butter.
  3. Pour into prepared tin and bake for 35-40 minutes. Take out from oven and invert cake for 5 minutes. Turn the cake out and cool completely before slicing into 3 layers horizontally.
  4. For custard filling : Soak instant custard mix in cocktail juice and hand whisk until thickened. Add in cream and tinned fruits. Divide into 2 portions.
  5. For assemble : Place 1 slice of cake in a 9" loose cake tin and spread 1 portion of filling. Top with another slice of cake and another portion of filling. Top with the last slice of cake. Refrigerate until set. Remove cake from tin.
  6. Spread whipped cream all over the cake and decorate side of cake with nibbed almonds. Arrange fresh fruits on it.
  7. brush diluted apricot galze onto fruits to prevent fruits from drying out.
  8. Refgrigate overnight.
Tapi ibu ada masalah dgn sponge cake. Kek ibu jd bantut....huhuhu....ibu fail buat sponge cake....
Sbb dah kesuntukan masa, ibu buat kek lain....resepi untuk kek untuk kek buah ni....also dr Amy Heng tp untuk base kek lain sbnrnya....
Ingredients:
A : 5eggs yolks, 1tsp vanilla essence
1/2 cup caster sugar, 1tsp salt
1/2 cup water, 1/2 cup oil
175g high ratio flour, 2tsps baking powder.
B : 5 eggs whites, 1/2 tsp cream of tartar
1/2 cup caster sugar
Method :
  1. Line a 9" round cake tin. Preheat oven at 170C.
  2. Hand whisk ingredients (A) in a bowl until well-combined. Leave aside.
  3. Whish eggs white and cream of tartar of ingredients (B) until foamy. Add in sugar and whisk untill stiff. Combine with no.(2). Pour into tin and bake for 40-45 minutes.
  4. Invert cake to cool before slicing into 3 layers horizontally.
